The Background Story
The Hot Chicken Sandwich on Pita

Oh, the Hot Chicken Sandwich - a diner favourite!

Why on pita? Unlike most breads, pita is, typically, sugar free.  It's a delghtful way to have a sandwich which incourages more of the filling taste - rather than the bread.  Bread is wonderful - we, here, are bread lovers!

Every now and again it's nice, though, to enjoy the alternative - the pita pocket - thin and less bready - putting the accent on the filling ... and droping just a small amount of sugar from our diet.  Besides, you don't have to deprive yourself of your favourite meal just because you don't have any regular bread in the house.  This sandwich is as good on pita as it is on any standard bread - specially when that bread is home made!  Of course, using home made pita is just aces too!

This easy to make dinner uses any chicken you have in the house (boiled, bar-b-qued, roasted ... it doesn't matter) and left-over gravy or your favourite intant dipping sauce or gravy (we like the subtle tang of an instant dipping sauce).  This sandwich is perfect, too, served with home-made, deep fried potatoes.  A nice side of high-in-fiber homemade coleslaw is also a great go-with for this dish!

In the most simple terms, you loose nothing by having this wonderful, classic sandwich on pita instead of bread.  It's just a wonderful option to the classic Hot Chicken Sandwich on Sliced Bread.
